HACCP is an internationally recognized acronym for Hazard Analysis and Critical Control Point or Hazard Analysis and Critical Point Control.

The Hazard Analysis and Critical Point Control (HACCP) system is based on a preventive methodology, with the aim of avoiding potential risks that can cause harm to consumers, through the elimination or reduction of hazards, in order to ensure that unsafe food is not made available to the consumer.

The HACCP system is based on the application of technical and scientific principles in the production and handling of foodstuffs from "the meadow to the plate".
